All of us have our favorite go to dishes that we don’t eat all the time, but we pull out when we feel we need a little TLC, the weather changes (Yey cooler weather) or we’re just missing home.
For me my favorite meal is Chicken Enchilada’s when I’m missing my hometown, friends and how things “Use to be”. However, my family oh my sweet picky eaters. Aren’t a fan of chicken Enchilada’s so I had to come up with a way we can all get what we want, but I’m not making two completely separate meals.
I was surfing on the Internet for a it was simple chicken crockpot meals and I found a recipe that I could tweak for my families needs. It was Creamy chicken and cheese casserole that the original poster included corn, and some other stuff, but my family oh my picky eaters. They only settled for Chicken, Cheese and Pasta.
I usually place the chicken thawed in the crockpot for 2-3 hours on high topped with Cream of Chicken Soup. I always say it’s ready for the next step when I can pull the nice tender chicken apart with a couple forks. Once I’ve been able to do that I separated what I would be using for their meal and left the rest in the crockpot for what would make a couple meals for me. I usually include any type of pasta we have in the house, but the kids do enjoy it more with bowtie pasta and my husband doesn’t really care as long as it’s food.
Top the pasta with the sauce and some cheese and dinner for them is DONE.
For myself I take the remainder of the Chicken and Cream of Chicken mixture, add Cream of Celery and Cream of Mushroom Soup and let it sit in the crock pot for about 10 minutes so they mix together really well.
Once that’s complete I take and I fill my Tortilla’s. I like using flour Tortilla’s but any will work! I preheat my oven to 450 and stick my Enchilada’s in there until the cheese is melted and the edges usually start to brown and give it that nice oh so comforting crunch on the outside and the filling on the inside.
After that take them out and ENJOY!
